Peanut Butter Truffles

Little balls of rich, gooey peanut butter covered in various toppings.

So simple, yet so delectable.

Although it was kind of time consuming to form each one and carefully roll in toppings, this is probably the easiest dessert ever. AND, it's vegan and gluten-free (at least my toppings were) so it's perfect for a party, which is why I made them.

Peanut Butter Truffles Recipe:
  • 1 whole container of peanut butter
  • About 2 cups powdered sugar
  • Pinch of salt
  • TOPPINGS! (Do whatever you want. I used finely chopped almonds, flaked coconut, flax seed, cinnamon sugar and dark cocoa powder).

Combine the pb, sugar and salt in a bowl. Mix so it's all incorporated and smooth. Roll about a tsp size amount in the palm of your hand to form a little ball, coat in topping, place on large baking sheet and store in freezer to harden. Serve when ready! Because of the high-fat content, they don't really freeze or stay hard for very long. After sitting out for about 20 minutes, they were kind of melty and gooey, but still very tasty!

Peanut Butter & Jelly Ice Cream

Peanut butter jelly time! Peanut butter jelly time!


Peanut butter jelly...ice cream time, that is.

For some reason, I've really been craving strawberry ice cream. Like need-to-go-to-store-now-to-feed-my-insane-craving.

I didn't want to go to the store though; I wanted to make it myself. I used the 'ol banana ice cream trick and added some berry jam. So tasty. Then instantly it dawned upon me that I should, nay NEEDED, to add some peanut butter. And I did. And I'm glad. Peanut butter and jelly ice cream rules.

Peanut Butter & Jelly Ice Cream Recipe:
  • 1 pre-sliced frozen banana
  • 1/2 tsp vanilla extract
  • 1 tbsp berry jam
  • 2 tsp peanut butter
  • dash of milk

Blend yo ingredients! I used an immersion blender this time instead of the regular blender. It worked even better and didn't require me to add a lot of liquid or refreeze.

Photos aren't too pretty, but who cares? Honestly, the crappier the photo, the tastier the food because I simply could not wait to eat it.

Chocolate Chip Peanut Butter Cookie Bars

That's quite a title.

But fitting because this is quite a dessert.

Let's see, it's got all the makings of a delicious chocolate chip peanut butter cookie, but more dense in bar form. Which basically just equals more cookie.












Umm yes.

It is not my own creation though. Took it from this genius, who has many other great recipes. Check out the site for this recipe.

That recipe doesn't call for peanuts, but who doesn't love a little extra crunch? Well actually, I guess most people since chunky peanut butter isn't very popular. Oh well! I added about 1/4 cup chopped peanuts. I think it probably made the bars more salty, so if you do add peanuts, I'd either throw in some extra sugar or use less salt.

I dare you to give this a whirl and not be tempted to eat the raw batter :)
